When would I use a brushless DC motor as opposed to a stepper motor?

When you want light weight, low outlay, low power consumption, and accurate positioning in descrete, preplanned steps, you'll use a stepper motor.

When you want high power, high speed, and the ability to push through resistances yet still reach your desired position, you'll use a DC servo motor.

A stepper won't generally cut your $300 milling vise in half, it'll bump into it with the cutter, then lose steps and get lost, but it won't keep chewing until your Kurt is in pieces. A servo doesn't care if the cutter is spinning or not, it'll keep trying until you bang the panic button. Servos are really good at high-speed traverses and cutting really tough materials, provided that your spindle is gutsy enough to keep up with them. Servos are smaller per unit torque, but require more power and external position sensors.

If you're building a really big high-powered machine, you'll almost certainly want servos. If you're building a small low-powered machine, you'll definitely want steppers.

Steppers are not at all suitable for use as spindle motors for cutting aluminum, but servos are. Servos are not at all suitable for small incremental positioning like fine-adjusting the fuel mix in a vehicle with a needle valve, but steppers are.
